Do your kids normally turn their noses up at meatloaf?  Mine too!  It used to be a huge battle to get them to eat it, but I finally discovered a recipe that my kids will happily eat.  This easy pizza meatloaf recipe is now one of their favorites and they actually ask me to make it on a regular basis!

As a work at home mom, I have the luxury of making recipes that have to cook a long time.  However, that doesn’t mean that I want to spend a lot of time in the kitchen, as that takes away from the time I have to get my work done.  So I love making meatloaf.  It just takes a few minutes to mix together, put it in the Perfect Meatloaf Pan.  Then I just throw it in the oven and get back to work.

However my kids hated the meatloaf I usually make.  So I decided to experiment a bit.  I used Italian bread crumbs in place of the regular ones, put a layer of mozzarella cheese in the middle, and topped it with pizza sauce instead of the standard ketchup.  I told my kids it was pizza meatloaf.  Evidently pizza sauce and cheese make anything more appetizing for a kid 🙂  They gobbled it up and my picky son even asked for seconds.  Score one for mom!

Ingredients needed for this Pizza Meat Loaf Recipe

  • 2 cups Italian Bread Crumbs
  • 1 cup Milk
  • 1/2 Onion, diced fine
  • 1 clove Garlic, finely minced
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 2 lbs Ground Beef (lean so you have less fat to drain off)
  • 2 cups Mozzarella Cheese, shredded
  • 1 Jar Pizza Sauce (We like the flavor of Boboli Pizza Sauce and use 2 packets)

Pizza Meatloaf Recipe Instructions

Preheat the oven to 350 degrees.  In a large bowl, combine everything but the cheese and sauce.  Mix well.  Press half the meat mixture into a large loaf pan.  Sprinkle the shredded cheese over the meat layer.  Then top with the remaining beef, pressing down so that it all forms together well.  Bake for 1 hour, uncovered.  Top with the pizza sauce then return to the oven for another 20 minutes.

Be Sure to Check the Temperature of this Pizza Meat Loaf Recipe Before You Serve It!

As a former registered dietitian, I do have to mention the importance of checking the internal temperature of the cooked meat to make sure it’s cooked thoroughly.  All those food safety classes I had to take really pounded that into my head 🙂  Anything with ground beef needs to be cooked to 160 degrees.  I use this digital meat thermometer with probe to check meat temperatures.

The probe is oven safe so you can stick it in the meat loaf when you put it in the oven and set the alarm to go off when it reaches the safe temperature.  That’s so helpful when you work from home and don’t want to have to worry about remembering to remove the meat loaf from the oven.  That feature has saved me from burning many a meal 🙂  Another nice feature of this particular one is that it can also function as a timer.  So that’s one less kitchen gadget taking up space.

    What a great idea! My daughter is vegetarian, so no meatloaf there, and my son loves my meatloaf, but they are older. I remember when they were younger they wouldn’t even touch it!
