Did you know that October is national pizza month? I didn’t either! My family doesn’t really need an excuse to celebrate pizza though. In our house, every Friday night is pizza night! In fact, my kids get quite annoyed if they don’t get homemade pizza on Friday. A couple of years ago, we tried to switch pizza night to Saturday and you would have thought we told them we were cancelling Christmas!
I love to make homemade pizza crust, but most Fridays that is just not an option. After a long day of work, the last thing either my husband and I want to do is to take the time to make a batch of pizza dough. After all, it’s not a quick process.
Fortunately, I discovered Tandoor Chef naan bread – it makes a yummy pizza crust! So my kids still get their homemade pizza on Fridays, and I don’t have to spend all evening in the kitchen.
One thing I love about making pizza using naan bread is that it cuts the baking time down to about 5 minutes. All you really need to do is melt the cheese and warm the ingredients. Homemade pizza doesn’t get much quicker than this!
One of my favorite pizzas to make on Friday nights is pesto chicken pizza on naan bread. Yum-O! And if you prep the veggies and chicken ahead of time, you can get your naan flatbread pizzas in the oven in just a few minutes.
A lot of times, I will do all the chopping the night before and then just set out the bowls of ingredients buffet style and let everyone make their own pizzas.
Pesto Chicken Pizza on Naan Bread Ingredients
The amounts will depend on how many people you are serving.
- Tandoor Chef Naan bread (1 per person)
- diced cooked chicken (approx 1/4 cup per person)
- diced roasted red peppers (approx 2 tbs per person)
- pesto – storebought or homemade (approx 2 tbs per person)
- muenster cheese (2 slices per person)
Storebought pesto is perfectly fine, but my basil pesto pizza sauce recipe takes just a few minutes to make and the taste is out of this world!
Basil Pesto Pizza Sauce Recipe
- 2 cups packed fresh basil leaves
- 1 cloves of garlic
- 1/4 cup walnuts
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 tbs lemon juice
- dash of sea salt
Place all ingredients in a food processor. Process until smooth, scraping down the sides as needed.
If you make this basil pesto pizza sauce recipe ahead of time, store it in the refrigerator with a thin layer of olive oil on the top to help keep it from browning.
This recipe makes about 1 cup of pesto.
Pesto Chicken Naan Bread Pizza Recipe Instructions
Top each naan flatbread pizza crust with a generous layer of pesto (really, can you ever have too much pesto?!) then top with the muenster cheese slices. You will have to tear the second slice into pieces to completely cover the naan bread.
Add the diced roasted red peppers and diced cooked chicken to the top of the cheese, evenly dispersing it to cover the entire pizza. Bake at 400 degrees for 5-10 minutes or until the cheese is melty and the ingredients are cooked through.
I bake mine for only 5 minutes because I want the cheese melted but not yet starting to brown. This ensures that the naan bread stays soft. If you like a crisper crust or golden brown cheese, let it stay in the oven a little longer.
