Cake pops are so much fun to eat, but they can be a bit of a pain to get the consistency right.  I discovered an easy way to make cake pops that always turn out just right.  In place of the cake and icing – just use store-bought Twinkies!  Twinkie Cake Pops are simple to make.  It’s a great activity to do with your kids on a rainy day.

If you have never heard of them before,  cake pops are little balls of cake and icing mixed together, then dipped in white chocolate.  It’s a little bit of cake-y goodness on a stick.  So much fun!  My kids love it when I make cake pops for parties.  None of us can ever seem to stop at eating just one!

One downside to making cake pops the regular way is that they can be time-consuming to make.  First you have to bake the cake, then let it cool.  Then you have to crumble it and mix it with icing.  Then you have to freeze them so they stick together when you coat them in the chocolate.

Awhile ago, it occurred to me that I could make the process a little bit quicker if I used Twinkies instead of making the cake myself.  So I tried it and to my delight, this no bake cake pops recipe was the perfect ratio of cake to icing to make the little balls stick together.

For this post, I decided to jazz things up a bit and add some real fruit spread to my Twinkie Cake Pops.  It ended up tasting a little bit like strawberry shortcake on  a stick.  Yum!  You could certainly use whatever flavor of fruit spread you like in this no bake cake pops recipe.  I think I might try blueberry the next time I make it!

Use a cookie scoop (or your hands) to form into small balls. Place the cake balls on a cookie sheet lined with waxed paper and freeze for a half hour.

If you don’t want to get your hands messy rolling the balls, you can also use this fun silicone cake pop mold.   Just fill it and pop it in the freezer for easy, no fuss cake balls!

If you aren’t using a silicone cake pop mold, stick a lollipop stick in each cake ball and return to the freezer for at least an additional half hour.

Melt the candy melts according to package instructions. Dip each cake ball into the melted white chocolate, coating completely.

I like to use a Wilton Chocolate Melting Pot to keep the chocolate warm.  I used to melt chocolate in the microwave but it eventually cools down and needs to be re-heated.  Using this electric chocolate melting post keeps the chocolate warm the entire time.

Allow the excess candy coating to drip back into the bowl.  (I find it helpful to work with 3-4 at a time, leaving the rest in the freezer until I am ready for them.  This way they don’t get too soft or fall off the stick.)

Quickly shake sprinkles over the top of each cake pop, then poke each stick into a cake pop stand to allow the cake pops to remain upright while they harden completely.  Alternately, you can make a homemade cake pop stand from a styrofoam block covered with plastic wrap.  Just poke each cake pop into the block and it will hold them upright while the chocolate cools and hardens.  Just replace the plastic wrap on your homemade cake pop stand each time you make a new batch.

Store your Twinkie cake pops in the refrigerator until ready to serve. If you want to make smaller or larger quantities of cake pops, the ratio is 1 Twinkie to 1/2 Tbs. fruit spread. For planning purposes, each Twinkie makes approximately 2 cake pops.  From a box of 10 Twinkies, I was able to get 24 cake pops.
