Creamy and sweet, this frozen Strawberry Dream Squares recipe is just perfect in the miserable heat of summer. My mom made this recipe all the time during the summertime when I was little. Now I enjoy making it for my own family.

My youngest daughter’s birthday is today and she requested this frozen strawberry dessert recipe instead of a traditional birthday cake. And I have to admit, if my own birthday wasn’t in the dead of the winter, I would probably have Strawberry Dream Squares for my birthday instead of a cake too. It’s just that good!

This dessert recipe takes a little time to put together – the crust needs to bake for 15 minutes then cool and you have to beat the egg whites and strawberries for 20 minutes. However a stand mixer makes it much easier.

When my mom made this strawberry dream dessert recipe when I was little, all she had was an electric hand mixer. So she had to stand there for 20 minutes while the egg whites, sugar, and strawberries whipped up into frothy goodness. And don’t get me wrong – it was totally worth the time! I am just grateful now that my trusty KitchenAid does all the work for me so I don’t have to stand there the entire time whipping up this frozen strawberry dessert recipe 🙂

Strawberry Dream Squares Recipe Ingredients:

Crust

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1/2 cup chopped walnuts

Filling

  • 1 cup heavy whipping cream
  • 1 (10 oz) pack frozen strawberries, partially thawed
  • 2 egg whites (or 1/3 cup liquid egg whites) – use pasteurized or Google how to pasteurize your own
  • 1 cup sugar
  • 1 Tbs lemon juice

Strawberry Dream Dessert Recipe Instructions

Preheat your oven to 350 degrees.

Spray a 9X13 inch pan with cooking spray.  Your pan needs to be both oven and freezer safe. The Oxo baking dish pictured to the left is a good choice for making this strawberry dessert recipe because it is safe to use in both the freezer and oven.

Set the strawberries on the counter to start thawing.

Make whipping cream in a KitchenAid stand mixer

Start by whipping your cream until peaks form.  Don’t whip too long or you will make butter!  Alternately you can use Cool Whip and skip this step all together.

Next you want to make the crust for this strawberry dream dessert recipe.  Use a pastry blender to combine the butter, brown sugar, and flour until you have coarse crumbs.

Chop your nuts.  I like to use this old-fashioned manual nut grinder because chopping the nuts was always my job when I was a kid and we had one just like that.

Yes the food processor is quicker, but the manual nut grinder gives more uniform pieces and you don’t have the risk of making nut butter 🙂

Making the crust for Strawberry Dream Squares

Stir the nuts into your crust mixture.  Press in the bottom of your prepared cake pan.  Bake for 15 minutes.  Cool.

After it has cooled, crumble the crust.  Remove about 1/3 of the crust mixture and set aside in a bowl.  This will be the topping for the strawberry dream squares.  Spread the remaining crumbs evenly in the cake pan and set aside.

Juice a lemon

If you are using fresh, juice the lemon.  Lemon juice you buy in the produce section at the grocery works just as well though.

Make the filling for strawberry dream squares dessert.

In a large bowl with an electric mixer, beat the berries, egg whites, sugar, and lemon juice together (high speed for a hand mixer or speed 4 in a KitchenAid) for 20 minutes.

Gently fold in the whipped cream.

Pour the strawberry filling into the cake pan on top of the crust.  Spread with a spatula to even it out.
