I love to make serve fun meals for my family on St. Patrick’s Day.  Everything is usually green or shamrock shaped.  So I was thrilled to discover spinach tortillas at the grocery store.  Cut with a large cookie cutter, they are easily transformed into Shamrock Quesadillas.

Tip:  If your kids don’t like or can’t have cheese, no problem.  Just make them into Shamrock peanut butter and jelly sandwiches.  Or use the same cookie cutter to cut lunch meat for a Shamrock Sandwich.

Tip:  If you can’t find spinach tortillas at your local grocery store, they are available on Amazon.

Or you can also make your own.  Tammy’s Recipes has a good recipe you can try.  I saw Trader Joe’s has a pesto cheese that would be good on this and would make it a completely green meal!
