Easy Peanut Butter Kiss Cookies Recipe
Preheat your oven to 375 degrees. Grease a baking sheet or line it with parchment paper.
In a small bowl, whisk the flour, salt, and baking soda.
With an electric mixer, mix the sugar, brown sugar, butter, and peanut butter until fluffy. Add the egg and vanilla and mix until incorporated. Add in the flour and beat until well combined.
Use a tablespoon of dough and roll it into a ball. I like to use a cookie scoop to ensure that the dough balls are all the same size.
Then roll the ball in the extra sugar and place it on your baking sheet. Repeat for the remaining dough, placing the balls about 2 inches apart.
Bake for 10 minutes. While the cookies are baking, remove the foil wrappers from the Hershey’s Kisses.
Remove the cookies from the oven and immediately press a Kiss into the center of each cookie. Allow the cookies to cool completely on the cookie sheet. Then place the cookies into the refrigerator for 30 minutes to allow the chocolate to harden again.
You don’t need to store the cookies in the fridge. You just need them to get cold so chocolate has a chance to set. That way the candy kisses don’t get smushed if you stack them in a tin. Store the cookies in an airtight container.
