Sweet, with just a hint of tart, this lemon gooey butter cookie recipe is a real crowd-pleaser. You would never guess it starts with a boxed cake mix!
This recipe is so easy to make and only requires a few ingredients. It’s perfect for an after-school snack for the kids or for sending in for class parties.
With any gooey butter cookie recipe, there is a fine line between underbaked and overcooked. You want to bake them long enough that the egg is cooked, but not long enough that the cookie takes on a cake-like consistency. I added some lemon curd to the recipe, which gives you a little more play room with the baking time. You could also use lemon pie filling.
Lemon Gooey Butter Cookie Recipe
- (1) 8 oz bar of cream cheese, softened
- 1/2 cup butter, softened
- 1 egg
- 1/4 cup lemon curd
- 1/2 tsp vanilla
- 1 box of lemon cake mix
- powdered sugar
With a mixer, beat the cream cheese, butter, egg, lemon curd, and vanilla until fluffy. Add the cake mix, mixing until well combined. Cover the mixing bowl and chill for at least 2 hours. (Or you can speed things up by sticking it in the freezer for a half hour.)
Roll the chilled dough into balls. Roll the balls in powdered sugar. Resign yourself to the fact that you will somehow get powdered sugar everywhere 🙂
Place the dough balls on an ungreased baking sheet at least 2 inches apart. They will spread as they bake so there’s no need to smush them down.
Bake at 350 degrees for 10-12 minutes. Cool completely.
